What is jerk?
Jerk is a style of cooking where meats, seafood or veggies are dry-rubbed or marinated with jerk spice seasoning. Jerk is believed to have been originally developed by the Maroons, African slaves who escaped to Jamaica in 1655. They bought with them the African meat cooking style and combined it with native Jamaican ingredients.
Fast forward to today, dishes like jerk chicken or pork are hailed to be one of Jamaica’s signature dishes. This winter, Jamaica Blue is brings you mountains of flavour with some Caribbean-inspired dishes where we’ve added some tasty jerk spice.Try one of our classic dishes with a Jamaican twist like the Eggs Benedict Jamaican Style, which we’ve added a jerk spiced hollandaise!
You can use jerk spice to season almost anything. It’ll add a delicious smoked, spicy and slightly sweet flavour to any dish it is used in.

Make your own: Jamaican Jerk Seasoning Recipe
Prep time: 5 minutes
Makes: ½ cup Mix
INGREDIENTS
1 tblsp Onion flakes
2 tsp Ground thyme
1 tsp Dried parsley
1 tsp Ground allspice
1⁄4 tsp Ground cinnamon
1 tsp Ground black pepper
1⁄2 tsp Cayenne pepper
1 tsp Paprika
1⁄2 tsp Chilli flakes
1⁄4 tsp Ground cumin
1 tblsp Garlic powder
1 tblsp Tumeric
2 tsp Salt
1⁄4 tsp Ground nutmeg
2 tsp Sugar
2 tsp Dried chives
